Inspired by the Neapolitan Caponata, a traditional poor dish whose main character is the "fresella", a Hard-baked breadpaired with cherry tomatoes and oil pickled eggplants. The soft leavened savory dough is enriched with tomato and "cima viola" eggplant chunks, a local cultivar from the "Agro Nocerino Sarnese", typically pickled in oil.
