Cultivated on the slopes of Etna, helichrysum is distinguished as an aromatic herb by its balsamic, slightly bitter notes. In general, helichrysum leaves (which are also reminiscent of liquorice, slightly sweet) are often eaten dried, as fresh they have a bitter aftertaste.
