A panettone without candied fruit that relies entirely on its enveloping aroma: rose water and the zest of chinotto, lemon and orange bring out its flavour. The dough contains yuzu white chocolate which, as it melts during baking, disappears from view but imparts an intense, balanced tartness that perfectly complements every single bite.
